When you work with whole, unprocessed grains, you have nothing to fear, even if the phrase “heavy grain” may seem threatening to those who have been conditioned to avoid carbs in every way. In contrast to their processed counterparts, unprocessed grains retain the bran, or outside layer of the grain, a feature that allows them to be digested slowly. An appropriate blood sugar level is achieved by slower digestion. As a result, carbohydrates from these grains are unlikely to be stored as fat by your body. The fiber content of unprocessed grains is such that it almost seems impossible to overeat them!

Maggie’s Vietnamese heritage made it difficult for her to go from animal products to plant-based eating when she first began this lifestyle. The classic dishes, as we can see, contain meat in some form or another. This is one of the typical challenges people have when they transition to a plant-based diet.

The challenges of creating new recipes as part of a plant-based diet plan are very interesting to Maggie. As a member of her mother’s team, Maggie developed vegan choices for Vietnamese cuisine. It is fun for her family to try out the new recipes based on a plant-based diet together.

This diet plan has relatively low protein, moderate fats, and high carbohydrates as we can see. A brown rice meal is her favorite way to consume complex carbohydrates. In addition to digesting more slowly, grains with little processing also contain fiber. Aside from making fresh juices, Kathleen also enjoys blending celery, apples, kale, cucumber, parsley, ginger, and Swiss chard.

During the morning, she makes a green juice with wheatgrass, turmeric, ginger, and lemon, or she drinks a smoothie. Her favorite doughnut is a moderate amount, and she eats it in moderation.

1 cup of vegetable broth, 1 cup of bread crumbs, 1/4 cup of cashew nuts, 1/2 teaspoon of apple cider vinegar, 1/4 teaspoon of lemon juice, 1/4 teaspoon of salt, and a little black pepper

How to prepare

Step1: In a medium pot, heat olive oil and add the green onions, celery, carrots, broccoli, salt, and pepper. Cook for about ten minutes until the vegetables are soft.

Step 2: Stir potato and garlic together, add vegetable broth, and cook on low heat for 20 minutes, or until potatoes are soft. Let cool slightly.

Margaret Denise Quigley (better known as Maggie Q) is not only known for kicking major booty on screen in movies like the Divergent trilogy, but for supporting animal rights, cooking up new business ventures, and even cooking in her own kitchen.

Performing her own crazy stunts (yes, Maggie does all of her own action scenes in Nikita, Divergent, and Designated Survivor) and building businesses (like ActivatedYou and Qeep Up) means Maggie needs a solid supply of fuel. Since Maggie has always maintained a remarkably lean physique, she has always been visible to the eyes of both athletes and environmental activists alike. However, she will be the first to warn you just how strong she really is.

“My mother is Vietnamese. My father was a skinny Irishman from New York, and I’ve been an athlete my entire life,” the athlete said earlier this year in Women’s Health.Don’t assume what my strengths are. It just shouldn’t be acceptable to make comments about anyone else’s body. You never know that person’s story.” Aside from her diet (which is plant-based, btw), Maggie is of the opinion that nutrition is essential to health. Here’s what her diet looks like on a day-to-day basis.

Maggie Q follows a vegan diet, but she doesn’t call herself vegan.

“I don’t [call myself vegan], because it has become a weird, negative term and people feel very judged by it,” Maggie explained to The Beet. “So I like plant-based better because it’s friendlier: It’s inclusive. You can’t judge people. They have to be where they’re at, and you have to accept them for where they are.”

She’s been plant-based for more than 20 years.

At a concert over 20 years ago, Maggie first became aware of the problems of animal cruelty and changed her diet completely.

“I attended a concert and a PETA Asia employee was tabling outside of the show… We connected, and she sent me information on animal welfare in the fashion, food, and entertainment industries,” she described to Veg News. “It made me sick, but nothing prepared me for the truth of the environmental impact of meat production. I quit cold turkey and never looked back. I didn’t understand how I could have ever claimed to love animals but hadn’t made the choices to protect them.”

Maggie credits the intentions of her vegan diet with making it stick.

Is Maggie’s plant-based eating a success because she stuck with it without a hitch? By focusing on benefits greater than just herself, she was able to make a positive impact. “When I [gave up meat], my convictions were rooted in animal cruelty and environmental impact,” she informed The Beet. “That’s why I gave up meat. Because it wasn’t about me and vanity and health, my convictions were very strong—so I never fell off the wagon.”

Her family is converting to plant-based eating, too.

Having raised her family on a plant-based diet and advocating for animal rights, Maggie has passed this culture on to them. “I have two sisters who don’t eat meat and one who is transitioning slowly,” she declared to Veg News. “My mom and dad have had a health scare in the last few years, and because of those issues, they are now paying attention and looking to make the change.”

“Everyone comes into the light in their own time,” Maggie responded. “The beginning was very hard because, culturally, Vietnamese food isn’t vegetarian. Our signature dish, Pho, is beef. I told my mom if she wanted me to still eat our food, we needed to invent a vegan version together. She was into it, and we did! I don’t feel challenged because my convictions are so rooted in compassion. If someone doesn’t see that, it truly isn’t my problem.”

Maggie starts most days with a green juice and a smoothie.

For those who are trying to adhere to a plant-based diet, she suggests that you eat dark, leafy greens. One of her favorite fresh juice recipes includes a mix of celery, cucumber, apples, kale, Swiss chard, parsley, and ginger. Despite her crew members teasing her about “drinking her lawn,” she continues to eat healthy anyway because the results are amazing!

In spite of Maggie’s busy schedule, she has a morning ritual she follows whenever she wakes up. “One thing that rarely varies is my morning,” she shared with Veg News.

Depending on her schedule, Maggie usually begins the day with a health shot (made from wheatgrass, turmeric, ginger, and lemon), blended green juice, or smoothie. Also known for whipping up an acai bowl from time to time, Maggie is an acai bowl connoisseur.

She’s a big fan of probiotics.

“I have always struggled with gut health,” Maggie explained to Thrive magazine. “Whatever brought that on, I couldn’t say, but breaking down foods has been a challenge for me even before I knew what that challenge was.”

“I wanted to create a line of probiotics that had everything I was looking for,” she described to The Thrive. “In my journey to improve my own health, I became extremely passionate about helping others out of the hole I was in.”

In response to the question, Maggie explained that she feels energized after eating a certain food. “Wheatgrass. There is nothing like it,” she reported to Thrive.

Despite her attempts to eat a plant-based diet while filming, Maggie has had trouble finding plant-based food. “I don’t deal with food from production,” she informed The Beet. “It’s not real food.”

In order to achieve her own goals, she decided to build her own solution. “On Nikita, I worked so many hours and needed so many calories (that) I hired a chef who learned the art of vegan cooking and mastered it! I loved her and I miss getting food from her every two hours! Yes, that’s how often I ate.”

Protein smoothies are a post-workout must for Maggie.

Maggie’s favorite workouts include Rise Nation and Katonah Yoga. She also enjoys hiking with her dogs. “My rescue dogs are my life and hiking with them is probably my favorite form of exercise,” she explained on Qeep Up’s website. “We can go for hours and nothing makes them—or me—happier!”

Whenever Maggie completes an exercise session, though, she goes straight to the gym to eat a protein shake. The recipe she uses most often, per Qeep Up:

“It used to hurt me. Now, it makes me laugh,” she responded. “I’ve raised my metabolism by being an active person, so I need more food than most people.
